Toffee Cookie Monster cupcakes

I said I was gonna make ’em, so I just had to! My friend from London, Naya, came to visit me on the way to South Asia and she made me pinky promise to bake her something she could help me decorate 🙂

After an incredibly long morning of uni meetings I went home and while she was out hugging koalas at the zoo, I started my baking..

This is actually a cake recipe for cake pops but it works perfectly all the same. The baking time is 20-25 min depending on your oven. I managed to make 12 normal sized cupcakes and 4 mini ones which I didn’t frost.
Oven 180
200gr flour
1tsp baking powder
160 ml milk
200 butter
150 brown sugar
2 eggs
1tsp vanilla

Mix sugar and butter til fluffy. Add one egg at the time til completely incorporated on the mix. Whisk in the vanilla. Add the baking soda, half of the flower and half if the milk. When combined add the rest. Make sure to scrape down the bowl with a spatula to have an evenly mixed cake. Fill the cupcake cases 3/4 and leave in the oven for 20 mins or so.



150 gr butter (soft)
1 1/2 cups icing sugar
1 tsp Vanilla
Blue food colouring

Put the frosting in a piping bag with a “grass tip” #233.



Once the cupcakes are cooled, start piping by applying some pressure and pulling the nozzle upwards. It doesn’t have to be perfect. The messier it is the better, just make sure to cover the whole service with grassy blue frosting.


For the eyes of our little monsters I rolled out some white sugar paste and cut little rounds using the biggest end of a piping nozzle as such


For its pupils I used choc chips and some frosting to secure them on the sugar paste. Make some crazy googley eyes ☺️.

I had made the cookies a couple of days in advance, so I just cut them in half, cut a little slit in the monsters mouth and placed the cookie.



And now they are ready to be eaten!
