Finally received what I call a proper order… 50 cupcakes for a video game launch, which won first place btw!! 🙂 Fun times!
My friend Mark was nice enough to ask me to make these and wanted the logo of their game.
As I am not that much of a pro (YET) I have to find a way to get these letters on the icing, drew an outline of the letters on a normal sheet of paper and placed parchment paper on top and traced the royal icing along the design. Not gonna lie, it took some practice but once you make 20 or so, you don’t need the design to guide you anymore. Keep in mind that if making that many, always make extra as the icing does break and you don’t want to be left with no back ups.
Royal icing (1egg white, 1-2 cups of icing sugar and 1tsp lemon juice, black food colouring). If the icing is too liquid then add more sugar and if it is too stiff add drops of water. Pour the royal icing in a piping bag and use a very thin and small nozzle to make the design and let dry for a couple of hours.
For the cupcake decoration I used 500 gr white sugar paste, sprinkled some icing sugar on a working surface and flatten the paste, then cut into small circles, I used a small glass and leave these to dry also.
Once all these elements are dried completely, feel off delicately the little letters from the parchment.
I had this recipe forever, which makes 6 nice and big chocolatey cupcakes, so I just had to some math (hated it) multiplied the recipe by 8 and baked a total of 65 cupcakes.
INGREDIENTS (this is to make the 6)
70g baking margarine (or butter if preferred)
½ Cup caster sugar
½ tsp vanilla essence or extract
1 Medium egg
½ Cup plain flour
¼ Cup cocoa
1/6 tsp bicarbonate of soda
¼ tsp baking powder
A pinch of salt
Just under ½ cup of soured cream
FROSTING (always for 6 could be a bit more but better than having less)
2 1/2 cup icing sugar
either 3 square of melted chocolate or 1 tbsp cocoa
Oven at 180°
In a cupcake tray place the patties (I used some silver ones)
Start by whisking the butter, sugar and vanilla til pale and fluffy. Add the egg and scrape down the sides to mix everything evenly. Add all the dry ingredients and lastly the sour cream.
Pour the mix in the tray making sure to fill the holders up to 3/4 and put in the oven for 15-20 mins.
You can start whisking the frosting. Put all the ingredients in a bowl and whisk until combined. Because of the sugar decoration, you don’t want to put too much frosting, otherwise the cupcake will be too sweet.
Once the cupcakes are out and completely cooled, pipe the frosting 🙂
And then the final touch
So there you go, I was told they were a great success 🙂 Goody!
