Chocolate Angel Food Cupcakes

It’s been two extremely rainy days and everyone is avoiding leaving home if not strictly necessary. Zero chances of getting out to buy any sort of comfort food… I’m thinking hot chocolate, marshmallows, chocolate chip cookies… mmmm pretty much anything that can be eaten whilst hugging your childhood teddy bear wrapped in you blankets listening to the pouring rain outside or whilst snuggling with someone in bed.

Well.. none of this is obviously happening so I’ll have to make due with what I have available in the house!

INGREDIENTS: (makes 11-12)

1/2 cup confectioners sugar
2/3 cup cake flour, sifted

1/4 teaspoon salt

8 egg whites from large egg whites, at room temperature
1/4 cup water
1 teaspoon almond extract
1/4 teaspoon cream of tartar
1/3 cup granulated sugar

1/4 cocoa powder

for the topping:

2 egg whites from large eggs, at room temperature
1/4 cup water
1/2 cup sugar
Pinch salt
1 teaspoon red food colouring

Turn oven on 180° and line cupcake tray with liners.

Sift flour, cocoa, salt and confectionary sugar together in a bowl. In a separate (preferably metal) bowl, whisk egg whites and slowly add the cream of tartar, almond extract, water, and the sugar.

Once soft peaks form, sift in the flour mixture a bit at the time and with a spatula gently combine the dry ingredients with the egg whites.

Fill the cupcake liners with the cake mixture. I used an ice-cream scoop so they are all the same size 🙂

Put in the oven for 15 minutes.

Whilst the cupcakes are cooling down, make the topping. Pour water and the sugar in a saucepan at medium heat for 10 minutes. Whisk the egg whites and add the food colouring. When the syrup is bubbling and thickening, pour in the eggs whites whilst still whisking at medium speed.

Spoon or pipe the meringue on the cupcakes and put in the oven for another 5 minutes just for have colouring and make the meringue slightly firmer.

The cakes should be really really soft, sweet and light 🙂
