Poppy Seed&Orange Loaf

We have organised the last picnic of the semester with my uni club. It’s a free event where everyone has to bring something to share. It just seemed like a good idea as it is the most stressful time of the semester and I think it’s necessary to have a break… and food!

It is getting pretty hot now here in Brissy so I have avoided making any chocolate based desserts or with fillings or buttercream. They will just melt right off. So I decided to try something like a bread or loafs that wasn’t banana (as good as it is, been there, done that).

INGREDIENTS: N.B.With this amount I made one loaf and 4 medium cupcakes.

For the Loaf:

3 cups of flour

3 eggs

2 cups of sugar

1 tsp baking powder

1/4 cup orange juice

1tbsp orange zest

1 1/2 tbsp poppy seeds

1 1/2 cups milk

1 cup vegetable oil

For the Glaze:

2/4 cups orange juice

1 drop of almond extract (not necessary if you don’t want it)

3/4 cups sugar

Turn oven on 180°. Place all the ingredients in a large bowl and whisk together. You might want to start by hand and then use the electric beater, I started and everything splashed everywhere.

Grease and flour a loaf tray and pour in the batter. Leave in the oven for 1 hour or until completely cooked (check by poking to cake with a skewer, if it come out clean then it’s ready).

  
Put all the ingredients for the glaze in a saucepan and at medium heat let it simmer. When the sugar melts completely, let it simmer for another 5 minutes or until it starts bubbling.

Pour the glaze on the loaf.
